A 2 oz. package of Potassium Bicarbonate is a common wine-making additive used to lower acidity and raise pH levels in wine, cider, or mead. An amount of 3.4 grams (about 1 1/3 teaspoons) per gallon reduces total acidity by 0.1%.

    Usage and Guidelines


    Dosage: Add 3.4 grams per gallon to lower acidity by 0.1%.


    Limit: Do not reduce total acidity by more than 0.3% to 0.4% total.


    Application: Dissolve the powder in a small amount of liquid before mixing it into your larger batch.


    Stabilization: Cold stabilize the batch afterward to help crystals form and drop out of the solution
